It’s dandelion season again, and I just had my little ones pick some out of the yard to try a new recipe for dandelion muffins.
2 c all purpose flour ( I substituted 1 cup whole wheat flour)
2 t baking powder (1 1/2 tsp. for high altitude)
1/2 t salt
1/2 c dandelion flower petals
1/4 c vegetable oil (I used melted coconut oil)
1/4 c honey
1 beaten egg
1 1/2 c milk
Combine flour, baking powder, salt & flower petals. In separate bowl, combine oil, honey, egg & milk. Mix liquids with dry ingredients, stir just to moisten. Spoon into oiled muffin tins and bake in a 400 degree oven for 20-25 minutes.
