Raw Kale and Spinach Salad

I found a basic recipe and adapted it to what I had in the refrigerator.  This is great as a side or as the main course like it was for us.  Here’s what I ended up putting in the salad!

1/2 bunch purple kale

equal bunch spinach

half red bell pepper, diced

1/4 cup blueberries

2 scallions, thinly sliced

1/2 avocado, diced

1/2 cup grape tomatoes, halved

Dressing: 1 smal lemon, juiced; 1 Tablespoon olive oil; salt to taste; pinch cayenne pepper (optional)

Toss and top with raw chopped walnuts
